1Press “SAUTE” on the Instant Pot . Once hot, add olive oil and yellow onion (diced) and sauté for ⏱️ 4 minutes to ⏱️ 5 minutes , stirring occasionally, until onion is tender and translucent.olive oil: 1 Tbsp, yellow onion: 1 medium

2Add red bell pepper (diced) and minced garlic and sauté for ⏱️ 1 minute , then press “CANCEL”.red bell pepper: 1 medium, garlic: 3 cloves

3Add all remaining ingredients except collard greens: dry black eyed peas , vegetable broth , bay leaves , smoked paprika , cayenne pepper , coconut aminos , liquid smoke , sea salt and pepper . 4Then top with collard greens (chopped), but don’t stir.collard greens: 1 small bundle

5Cover with lid, press “PRESSURE COOK”, and cook on high for ⏱️ 17 minutes . Allow to naturally release pressure for ⏱️ 15 minutes , then manually release any remaining pressure.

6Remove bay leaves and stir. Taste and adjust seasonings as needed.
